Any sturdy fish will work in this recipe: swordfish, trout or salmon would all make reasonable replacements. If you can get fresh pineapple, you’ll love the end result. Cut the slices thick.

Tip: Ripe pineapple is primarily yellow and smells obviously like pineapple even before cutting.

Ingredients

  • 1 lb. skinned tuna steak, quartered
  • 1 Tbsp. cajun seasoning blend
  • ½ Tbsp. garlic powder
  • 2 sweet snack peppers, roasted
  • ¼ cup mayo
  • ½ tsp. hot sauce
  • 2 tsp. lime juice
  • ¼ tsp. salt
  • 4 slices pineapple
  • 8 leaves green leaf lettuce
  • 4 whole-wheat buns

Directions

  1. Heat grill to medium-high heat. Season both sides of the fish with cajun seasoning and garlic powder.
  2. Grill seasoned fish and pineapple to desired doneness (3-5 minutes per side).
  3. In a food processor, combine peppers, mayo, hot sauce, lime juice, and salt.
  4. Assemble the burgers with fish, pineapple, lettuce, and pepper sauce.
