Black rice, like brown rice, has a long cooking time. With the pink of the grapefruit and green avocado, the visual effect is startling and lovely. The flavors, however, are just as well served by any kind of rice, so don’t hesitate to use up what you have. Wild rice makes another lovely option.

Tip: If you don’t love eating the tough skin on grapefruit in salad, the best technique to research is how to supreme citrus.

Ingredients

Dressing:

  • ¼ tsp. salt
  • 1 clove garlic, minced
  • ¼ cup orange juice
  • 2 Tbsp. olive oil
  • ⅛ tsp. red pepper flakes
  • 1 Tbsp. rice wine vinegar

Salad:

  • 1 cup black rice
  • 1 grapefruit, peeled and chopped
  • 1 avocado, peeled and diced
  • 2 green onions, chopped
  • Pepper to taste

Directions

  1. Whisk together dressing ingredients and set aside.
  2. Cook the rice according to package directions.
  3. Once the rice is cooked, transfer it to a medium-size bowl and toss with the dressing. Gently stir in grapefruit, avocado, and green onion. Season with pepper to taste.
