Love burgers and looking for something unique to try out? With protein from the black beans, the rich nutritional profile of beets and a delicate balance of herbs and spices, these vegan burgers will be a new favorite.

Tip: Instant brown rice makes the preparation faster. Alternatively, if you have cooked brown rice in the fridge, microwave 1 cup for 1-2 minutes to use in place of freshly cooked rice.

Ingredients

  • ½ cup brown rice
  • 1 Tbsp. olive oil, divided
  • 1 onion, minced
  • 3 large red beets, minced
  • 3 cloves garlic, minced
  • 2 Tbsp. cider vinegar
  • 1 (15 oz.) can no-salt-added black beans, drained and rinsed
  • Juice of ½ lemon
  • 2 Tbsp. minced fresh parsley
  • 1 tsp. coriander
  • ½ tsp. thyme
  • 2 Tbsp. flour
  • ½ tsp. salt
  • ½ tsp. pepper
  • 6 Guiding Star-worthy hamburger buns
  • 6 lettuce leaves

Directions

  1. Cook the rice according to package directions.
  2. While the rice is cooking, heat a quarter of the olive oil in a skillet over medium-high heat. Add the onion, reduce the heat to medium, and cook until the onions are translucent and softened. Stir in the beets. Cover and cook until the beets are completely tender, stirring occasionally (15-20 minutes).
  3. Add the garlic and cook until it is fragrant (1 minute). Add cider vinegar and stir to release any bits stuck to the pan.
  4. Mash the black beans with a fork and combine all ingredients except remaining oil. Shape mixture into six patties.
  5. Heat remaining oil in a heavy, non-stick skillet and grill on medium-high, until heated through and slightly crispy (2-3 minutes per side).
  6. Place burgers on buns and top with lettuce leaves.
