Tomato brings a tart richness to the pesto to flavor this meal beautifully, completing the steak perfectly.

Ingredients

Steak:

  • 2 garlic cloves, minced
  • 2 tsp. pepper
  • 1 lb. boneless beef top sirloin steak, cut ¾" thick

Tomato Pesto:

  • 3 plum tomatoes, halved lengthwise
  • 2 cups lightly packed fresh basil
  • ¼ cup grated Parmesan cheese
  • 3 garlic cloves
  • 1 Tbsp. olive oil
  • ¼ tsp. salt
  • ¼ tsp. pepper

Directions

  1. Heat grill to medium. Combine minced garlic and pepper in small bowl; press evenly onto beef steak.  Grill steak and tomatoes at the same time. Grill tomatoes cut-side down until just tender, turning once (6-8 minutes). Grill steak to a minimum internal temperature of 145ºF, turning once (8-10 minutes per side).
  2. Place tomato pesto ingredients in a blender or food processor. Cover and process until smooth.
  3. Carve steak into slices and serve with tomato pesto.
