Beef & Tomato Sauce with Pasta - 1 Guiding Stars

If you love a good slow-braised ragu but never have the time to make one, this is a dish you must try. Starting with a decent cut of meat and working in a skillet to reduce cooking time, you can get wonderful flavor even on a busy weeknight.

Ingredients

  • 2 cloves garlic, minced
  • 2 tsp. olive oil
  • 2 cups spiral pasta
  • 10 oz. spinach, chopped
  • 1 lb. round tip beef steaks, cubed
  • 1 (14 oz.) can seasoned chunky tomatoes, undrained
  • ΒΌ cup grated Parmesan cheese

Directions

  1. Toss beef with garlic and oil. Set aside.
  2. Cook pasta according to package directions, adding spinach to water during last 3 minutes of cooking. Drain well.
  3. While pasta is cooking, heat a large nonstick skillet over medium-high heat. Stir-fry beef until outside is seared and no pink remains.
  4. Drain excess fat from the pan and add the tomatoes. Cook over medium-high heat until sauce is thickened. Add pasta to sauce, toss to coat. Cook until heating through, then serve hot, garnished with cheese.
