If you’re looking for a new way to enjoy peas, fresh or frozen, try this simple salad. It will take no time to prep and everyone at the table will be clamoring for more.

Ingredients

  • 2 cups peas, fresh or frozen
  • ½ cup chopped almonds
  • ½ cup chopped green onions
  • ½ cup crumbled low-fat feta cheese
  • ¾ cup plain, non-fat Greek yogurt
  • 2 Tbsp. balsamic vinegar
  • black pepper to taste

Directions

  1. Thaw peas, if they’re frozen. Toast almonds and combine with peas.
  2. Stir in onions, feta cheese and yogurt.
  3. Mix in balsamic vinegar and season with pepper. Cover and refrigerator.
