Whether you eat these with marinara sauce over pasta or as an appetizer, these chicken meatballs are extremely nom-able. Turkey bacon provides a little extra oomph to flavor and texture. Tomato sauce offers a bright balance to added herbs.

Ingredients

  • 2 strips turkey bacon, diced
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 lb. ground chicken
  • 1 egg white
  • 3 Tbsp. finely chopped fresh parsley
  • 2 Tbsp. low-sodium tomato sauce, divided
  • 1 Tbsp. olive oil

Directions

  1. Preheat oven to 400ºF.
  2. In a skillet over medium heat, cook the bacon until some of the fat has rendered out (4-5 minutes).
  3. Add the onion and garlic and cook until the onion is translucent and the bacon is just crispy (5-8 minutes). Remove from the heat and cool slightly.
  4. Stir together the bacon mixture, ground chicken, egg white, parsley, and half of tomato sauce in a large bowl. Form into about 16 (1”) balls. Place balls in a large baking dish.
  5. Whisk together 1 tablespoon of olive oil and remaining half of tomato sauce together in a small bowl and brush on top of each meatball. Bake until meatballs reach a minimum internal temperature of 165ºF (15-20 minutes).
