This quick, nutritious and delicious is perfect for a summer’s afternoon. Mix it up with a variety of greens if you don’t have spinach in the fridge—the flavors pair well with just about anything.

Ingredients

  • ½ lb. baby spinach
  • 3 oranges, peeled and diced
  • 1 cucumber, peeled and sliced
  • ½ cup thinly sliced red onion
  • ⅓ cup chopped walnuts
  • 2 Tbsp. Balsamic vinegar
  • Pepper to taste

Directions

  1. Mix spinach, oranges, cucumber, onion, and walnuts in a large bowl.
  2. Top with balsamic vinegar and black pepper to serve.
