Perfect for a warm summer’s evening, hummus and pistachios add protein to this spicy, smooth salad. Raisins offer a note of sweetness that everyone will love. Pair it with a slide of fresh, whole-grain bread for a simple and satisfying meal.

Ingredients

Dressing:

  • Juice and zest of 1 lime
  • 2 Tbsp. hummus
  • ½ ripe avocado, mashed
  • 1 Tbsp. minced chives
  • 1 carrot, finely shredded
  • ⅛ tsp. salt
  • Pepper, to taste

Salad:

  • 3 cups arugula
  • ¼ cup golden raisins
  • 2 Tbsp. pistachios, crushed

Directions

  1. In a medium bowl, whisk together all dressing ingredients until smooth.
  2. Gently toss dressing with arugula.
  3. Divide dressed arugula in bowls and top with raisins and pistachios.
