Apple Slaw

This coleslaw is a minor variation on the classic theme, adding apples for their sweet-tart crunch, ginger for some light heat and bold flavor, and soy sauce for umami.

Ingredients

  • Dressing:

    • ½ cup canola mayonnaise
    • 1 tsp. reduced-sodium soy sauce
    • 2 tsp. sugar
    • 1 tsp. apple cider vinegar
    • ½ tsp. ground ginger

    Slaw:

    • 2 (8.5 oz.) bag cole slaw mix
    • 2 green onions, chopped
    • 1 tart apple, thinly sliced

Directions

  1. Whisk together dressing ingredients in a large bowl.
  2. Toss slaw ingredients with dressing. Serve immediately or chill for later.
