Salads can be a great way to make sure you’re getting enough fruits and veggies, but they can also be a pitfall for salt and fat if they’re overdressed. The trick to finding a good balance is filling the salad with ingredients so flavorful you won’t want more than the lightest dressing.

Ingredients

  • 8 cups mixed greens
  • 1 cup grape tomatoes
  • 1 apple, diced
  • ¼ red onion, diced
  • 2 Tbsp. blue cheese, crumbled
  • 2 Tbsp. walnuts, chopped
  • 1 lemon, juiced
  • ¼ tsp. pepper
  • 1 Tbsp. olive oil

Directions

  1. Place the greens in a large salad bowl.
  2. Top them with the tomatoes, apple, onion, cheese and walnuts.
  3. Toss gently with lemon juice, pepper, and olive oil.
