The keys to a good corn muffin are (1) don’t overmix the batter and (2) don’t overbake. Adding apple and corn to the mix helps retain moisture.

Tip: Frozen, canned, or fresh corn will all work equally well.


  • 2 cups flour
  • ½ cup yellow cornmeal
  • ¼ cup brown sugar
  • 1 Tbsp. baking powder
  • ¼ tsp. salt
  • ¾ cup skim milk
  • 1 egg
  • 1 apple, peeled and chopped
  • ½ cup corn


  1. Preheat the oven to 425ºF. Line a 12-cup muffin pan with paper or foil liners.
  2. In a large bowl, combine the flour, cornmeal, brown sugar, baking powder and salt. Stir to blend evenly.
  3. In a separate bowl, whisk together the milk and egg. Stir in the apple and corn.
  4. Pour the wet mixture into the flour mixture. Stir gently until just moistened. Some lumps are okay.
  5. Fill prepared muffin cups two-thirds full and bake until springy to the touch (18-22 minutes).
