Pancetta is essentially an unsmoked bacon. If you prefer a smoky flavor, go ahead and use a few strips bacon instead. Whichever you choose, the technique of using a small amount of meat to punch up your favorite vegetable is a fantastic way to transition to including more produce in your diet without letting go of the meaty flavors you love.

Ingredients

  • 4 oz. pancetta, chopped
  • 1 Tbsp. olive oil
  • 1 lb. asparagus, cut into 2" pieces
  • 1¼ cups thinly sliced leeks
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • 1 tsp. orange zest
  • 2 Tbsp. toasted pine nuts
  • 2 Tbsp. chopped fresh parsley
  • Pepper to taste

Directions

  1. In a large, non-stick pan over medium heat, sauté pancetta, stirring frequently, until fat is rendered and pancetta is crispy (8-10 minutes).
  2. Add oil, asparagus, and leek. Sauté until asparagus is just tender (3-4 minutes).
  3. Add garlic, zest, toasted pine nuts, and parsley. Sauté until fragrant (1 minute).
  4. Season to taste with pepper and serve immediately.
