Nothing makes for a cozy weekend morning like fruit-filled pancakes. Packed with the extra flavor of oats and the juiciness of raspberries, these pancakes need no syrup to feel like a sweet treat.

Ingredients

  • 1 1/2 c. old-fashioned oats
  • 1 c. plain, fat-free Greek yogurt
  • 1 1/2 c. skim milk
  • 1 1/2 c. white whole-wheat flour
  • 1/4 c. unsweetened applesauce
  • 1 t. baking soda
  • 1 t. baking powder
  • 1/4 t. salt
  • 4 eggs
  • 1 t. vanilla
  • 1 c. raspberries

Directions

  1. In a large bowl, mix oats, yogurt and milk. Let stand 15-30 minutes.
  2. In another large bowl, mix flour, sugar, baking soda, baking powder, and salt.
  3. Beat eggs and vanilla into oat mixture. Pour oat mixture into flour mixture and stir until evenly combined.
  4. Heat skillet or griddle over medium heat. Spritz with nonstick cooking spray. Pour batter onto pan and sprinkle with berries. Cook until pancakes are bubbly on the top and slightly dry at the edges. Turn and cook until both sides are nicely browned.
  5. Serve warm, with extra berries if desired!
