If color is something you crave on your table, don’t pass this salad by. No matter the season, the pink and green and yellow will evoke springtime. Served chilled, this salad is simply refreshing. For a warm meal, serve it as a bed for your favorite spiced salmon or chicken for a just barely warmed dish that will pick up your favorite spice rub beautifully.

Ingredients

  • 1 red grapefruit
  • ½ cup edamame, cooked and chilled
  • ½ cup corn
  • ¼ Hass avocado

Directions

  1. Peel, seed, and cube grapefruit.
  2. Peel and cube avocado.
  3. Add the corn and edamame to the grapefruit and avocado and gently toss. Serve chilled.
