It’s quick, delicious and healthy—a perfect recipe for playing with a little wine to cook fish. Whether the end result comes out picture perfect or messy, you can’t lose with the flavor.

Ingredients

  • 1 Tbsp. olive oil
  • 1 cup sliced mushrooms
  • ½ cup chopped green onion
  • 1 clove garlic, minced
  • 2 Tbsp. rosé or white wine
  • 2 tomatoes, sliced
  • ½ cup chopped broccoli
  • 12 oz. haddock fillet
  • 2 Tbsp. chopped fresh parsley

Directions

  1. In skillet, heat olive oil. Sauté mushrooms, onions, and garlic until starting to soften (4-5 minutes).
  2. Add remaining ingredients except parsley. Cover and simmer until fish flakes easily with fork (8-10 minutes).
  3. Remove fillets to warm platter. Pour vegetables over fish and top with parsley to serve. If you like, lemon and paprika make lovely garnishes.
