Rice and beans, beans and rice–however you name it, this dish is a classic and a staple worth knowing how to make well.

Ingredients

  • 1 lb. black beans
  • 1 green pepper, chopped
  • 1½ cups chopped onion
  • 1 Tbsp. vegetable oil
  • 2 bay leaves
  • 1 garlic clove, minced
  • ⅛ tsp. salt
  • 1 Tbsp. lemon juice
  • 3 cups rice
  • 1 (4 oz.) can pimento slices, drained
  • 1 lemon, cut into wedges

Directions

  1. Soak beans overnight in cold water. Drain and rinse.
  2. In large, heavy-bottomed pot, stir together beans, green pepper, oil, onion, garlic, salt, and bay leaves. Cover with water, cover, and boil for 1 hour.
  3. Reduce heat and simmer, covered, until beans are very tender, stirring occasionally, and adding water if needed (3-4 hours).
  4. Remove and mash about  of beans. Return to pot. Stir and heat through. Remove bay leaves and stir in lemon juice.
  5. Cook rice according to package directions.
  6. Serve over warm rice, garnished with pimento and lemon wedges.
