The best flavors sometimes come in simple packages.  Sweet beets and carrots with high-quality broth combine for a soothing soup.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup onion, minced
  • 4 cups beets, trimmed, peeled, and diced
  • 1/2 cup chopped carrots
  • 4 cups low-sodium vegetable broth
  • 1 cup water
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 4 tablespoon sour cream (optional)

Directions

  1. Heat the olive oil in a large saucepan over medium-high heat. Add the onion and cook until softened. Add the beets and carrots and cook for 5 minutes. Add the broth, water, lemon juice, salt and pepper.
  2. Bring to a boil, reduce the heat to medium-low, cover the pan, and simmer until the beets are very tender.
  3. Remove from the heat and let cool slightly. Using an immersion blender, blend until pureed. Serve warm, garnishing each bowl with sour cream.
